Sloppy Cols
This is a staple in the Patrick-Goudreau household, as they are sooooo easy to make, and I take them to work with me at least twice a week. You can add any variation you like based on your preferences. Packed with protein, vitamins, and flavor!

 

 

INGREDIENTS

 

1 fresh baguette, sour or sweet

hummus, any flavor you prefer

avocado

alfalfa sprouts

carrots, shredded

tomatoes, preferably seasonal, sliced

roasted red peppers, preferably packed in water

mixed greens, optional

 

DIRECTIONS

 

1.      Prepare the veggies (slice the tomatoes, peel the carrots, scoop out the avocado)

2.      Spread the hummus on the bread – or if you prefer, eliminate the hummus and use the avocado as your spread

3.      Create your sandwich!
