FOR MCDOUGALLERS: There is a small amount of olive oil in the pesto, but try replacing it with a couple teaspoons of white/light miso; the polenta squares require a light brushing of oil for grilling, but you may bake them instead; the green beans call for oil to - essentially - caramelize the garlic; and there is no added oil in the bean salad or strawberry pie.

FOR MCDOUGALLERS: One tablespoon of oil called for in the peppers (to brush them before baking), the oil for sauteeing the veggies in the "Basic Basil Pesto with Polenta Squares" can be replaced with water, but there is a small amount of oil in the pesto. There is oil in the Muhammara and cake but none in the Asparagus Soup.

FOR MCDOUGALLERS: There is a little oil in the pesto for the bruschetta, but you may replace it with a little light miso. The crust for the quiche calls for oil, but you can find an premade oil-free crust. Oil to saute veggies in the Ratatouille can be replaced with water, and a small amount of oil is called for in the scalloped potatoes for greasing the casserole dish. No added oil in the pie.
