Who are we reaching?
Not only are there 18 million vegetarians in the United States, according to a recent Zogby poll, 20%-25% of the population consider themselves "vegetarian-inclined." That is, they replace meat with meat alternatives for at least some meals or eat 4+ meatless meals per week. The other relevant group is the 35%-50% of the population who, according to the same poll, consider themselves "health-conscious" and strive to eat 2-3 meatless meals per week.
